The VG-MAX cutting core is wear resistant, corrosion resistant, and holds a fine, sharp edge with a 16-degree angle on each side. 68 micro layers of Damascus cladding look beautiful, support and protect the core. Each knife is hammered by hand with a technique known as tsuchime, giving a beautiful finish that works to reduce knife dragging while preventing food from sticking to the blade. The beautifully grained walnut PakkaWood handles nestle comfortably in the hand, and the Shun logo embossed on the bottom adds balance and beauty to the knife, whether in the hand or at rest in the block. It is not recommended to put Shun Premier (or any quality knife) in the dishwasher.
