The Shun Premier 8 inch Kiritsuke, known as a Master Chef’s Knife in Japan, is ideal for slicing, chopping and portioning proteins. It also slices cooked proteins easily and gracefully. The Shun Premier Kiritsuke features a slightly curved edge so that it works well even with rocking cuts. While the blade is extremely strong and will hold its edge, Japanese Steel does not have flexibility so we do not advise using this knife on bone in meats, frozen fruits, or stone cutting boards.

Each knife is hammered by hand with a technique known as tsuchime, giving a beautiful finish that works to reduce knife dragging while preventing food from sticking to the blade. The beautifully grained walnut PakkaWood handles nestle comfortably in the hand, and the Shun logo embossed on the bottom adds balance and beauty to the knife, whether in the hand or at rest in the block. It is not recommended to put Shun Premier (or any quality knife) in the dishwasher.
